Learn how to make this authentic Maharashtrian main course recipe from our chef Archana on Ruchkar Mejwani. <br /> <br />Ingredients: <br /> <br />3-4 tbsp Oil <br />2 Onions, chopped <br />2 Drumsticks, chopped <br />100 gms Purple Yam, chopped <br />2-3 Brinjals, chopped <br />1 Potato, chopped <br />1 Cup Beans <br />1/2 Carrot, chopped <br />1 tbsp Sesame Seeds <br />1/2 tsp Turmeric Powder <br />1 tbsp Mix Masala <br />Coriander Leaves <br />Salt to taste <br />Water <br /> <br />Method: <br /> <br />- In a pan heat some oil. Add sesame seeds, turmeric powder, coriander leaves, onion & salt. Mix everything well. <br />- Then add drumsticks, purple yam, brinjals, potato, beans, carrot, mix masala & water. Mix all the ingredients well. <br />- Cover it with a lid and let all the vegetables cook on a low flame for 15 minutes. <br />- Serve the Bhogichi bhaji with chapati or plain rice.
